Akademija poti\u010de odr\u017eivu i eti\u010dnu proizvodnju i pru\u017ea obrazovne mogu\u0107nosti. Presti\u017ene nagrade Academy of Chocolate<\/em> pokrenute su 2005. godine. Nastoje identificirati, prepoznati i predstaviti najtalentiranije svjetske proizvo\u0111a\u010de \u010dokolade i njihove vrhunske \u010dokolade.<\/p>\n

Rijetka vrsta kakaovca koja raste isklju\u010divo u Ekvadoru. Smatra se jednom od najboljih i najstarijih sorti, te je osnova za izradu nekih od najcjenjenijih \u010dokolada (poput ekvadorskog To’aka i hrvatskog Tamana).<\/p>\n

Azteci, posljednje i najpoznatije pleme iz niza starih meksi\u010dkih civilizacija. U 15. i 16. stolje\u0107u vladali su velikim carstvom u ju\u017enom Meksiku: Prema njihovoj vlastitoj predaji, potje\u010du s otoka Aztlana u sjevernom Meksiku. U povijesti se Azteci javljaju kao nomadski lovci oko XII. st., u doba raspadanja neko\u0107 mo\u0107ne dr\u017eave Tolteka. Prema jednoj pretpostavci, Azteci su tijekom 12. st. do\u0161li u Meksiko i 1325. osnovali na otoku, usred jezera Tezcuco, svoju naseobinu Tenochtitl\u00e1n (na tom je mjestu danas grad M\u00e9xico).<\/p>\n

Nepovezanost osvojenih teritorija i neprijateljstvo pokorenih plemena, uz posvema\u0161nju nepripremljenost Azteka da se suo\u010de s ambicioznim, beskrupuloznim i gramzljivim europskim osvaja\u010dima, dovela je do toga da ih je H\u00e9rnan Cort\u00e9s, iskrcav\u0161i se kod Veracruza 1519., vrlo brzo svladao. Uz poljodjelstvo (uzgoj kukuruza, kakaa, duhana, pamuka) bili su razvijeni obrti (obradba bakra, bronce, zlata, srebra) i trgovina. Doma\u0107e \u017eivotinje nisu poznavali (osim psa). Jedino prometno sredstvo bili su \u010damci. Kola i \u017eeljezo upoznali su s dolaskom Europljana. U kulturi Azteka odra\u017eavali su se utjecaji podjarmljenih plemena, osobito Tolteka. Visoko je bila razvijena umjetnost, naro\u010dito arhitektura.<\/p>\n

Poznavali su slikovno pismo i kalendarski sustav. Vjerske predod\u017ebe velikim su dijelom tako\u0111er preuzeli od Tolteka. Glavno bo\u017eanstvo bio je bog rata i sunca; bogovima su prinosili ljudske \u017ertve. Na podru\u010dju Meksika \u017eivi oko 750 000 potomaka Azteka; prete\u017eno su poljodjelci i industrijski radnici. \u010cokoladu su konzumirali kao hladan napitak, za\u010dinjen s \u010dilijem i medom. Zrno kakaa su osim toga koristili i kao novac.<\/p>\n

Od Azteka je nau\u010dio kako se priprema napitak od kakaovca koji se potom, uz prilagodbe, po\u010deo koristiti na dvorovima diljem Europe.<\/p>\n

Ova pojava obi\u010dno je posljedica nepravilnog skladi\u0161tenja, primjerice \u010duvanja \u010dokolade na toplom mjestu zbog \u010dega se njena povr\u0161ina po\u010dinje rositi.
B) Masno cvjetanje doga\u0111a se kada mast iz \u010dokolade\u00a0izbija na povr\u0161inu.\u00a0\u010cuvanje \u010dokolade na toplome\u00a0mo\u017ee pokrenuti ovu pojavu, kao i velike temperaturne promjene.
\u010cokolada koja ima bijeli sloj nije nu\u017eno pokvarena ali je njezina tekstura izmijenjena \u0161to utje\u010de na okus.<\/p>\n

Iako njegova \u010dokolada nikada nije bila na glasu kao vrhunska, Milton Hershey ipak je zaslu\u017eio posebno mjesto u povijesti \u010dokolade. Ne postoji jasan podatak od kada se koristi (izvjesno je da predatira otkri\u0107e kakaa, te se na njemu mljelo i kukuruz), ali je znano da se prilikom proizvodnje \u010dokolade koristio i u Europi sve do industrijske revolucije (neki talijanski \u010dokolatijeri koristili su ga do kraja 20. st.). Specifi\u010dno je da ga se koristi zagrijanog i kle\u010de\u0107i na koljenima.<\/p>\n

Brkovi su osobito bili popularni u viktorijanskom razdoblju kada se od vojnika zahtijevalo da ih imaju. Posuda koja predstavlja jedan od najzna\u010dajnijih artefakata iz povijesti \u010dokolade. Na\u0111ena je u mayanskom grobu anonimnog sredovje\u010dnog vladara iz druge polovice 5. stolje\u0107a. Tri su posebnosti ove posude. Prvo, zanimljivog je oblika: spoj je posude i poklopca koji ujedno slu\u017ei za no\u0161enje.<\/p>\n

Druga posebnost su hijeroglifi na kojima se izri\u010dito spominje kakao: “Posuda za pijenje za witik kakao, za koxom mul kakao”. Jo\u0161 nije poznato \u0161to je witik, a \u0161to koxom mul, no pretpostavlja se da je rije\u010d o za\u010dinima. No zanimljivo je da je hijeroglif za kakao ovdje po prvi put jasno identificiran (\u010de\u0161alj i riba), \u0161to ovu posudu \u010dini presudnom u razumijevanju mayanskog pisma.<\/p>\n

Tre\u0107a je unutra\u0161njost. Kemijska istra\u017eivanja potvrdila su prisutnost teobromina i kofeina, \u0161to potvr\u0111uje da se u toj posudi dr\u017eala \u010dokolada.<\/p>\n

Rezultat je bio ukusniji i topljiviji kakao u prahu koji je potaknuo rast industrije vru\u0107ih \u010dokolada. Kakao masu obra\u0111ivali su alkalnim solima kako bi se uklonio gorak okus i krute tvari kakaa u\u010dinile topljivijima u vodi. Dobiveni proizvod naziva se \u010dokoladom “nizozemskog procesa”. Danas je taj postupak poznat pod nazivom “Dutching”. Kona\u010dni proizvod, nizozemska \u010dokolada, ima tamnu boju i blag okus. Van Houten se brzo \u0161irio i do kraja 19. stolje\u0107a pro\u0161irio se u Ujedinjeno Kraljevstvo, Sjedinjene Dr\u017eave, Francusku i Njema\u010dku. Tada je ime Van Houten bilo sinonim za visokokvalitetni kakao u prahu.<\/p>\n

Tvornica za proizvodnju konditorskih proizvoda i alkoholnih pi\u0107a, osnovana 1921. u Po\u017eegi. U Zve\u010devu je proizvedena prva \u010dokolada s ri\u017eom na svijetu. Bila je napravljena od ekspandirane ri\u017ee, 90-postotne mlije\u010dne \u010dokolade i mlijeka iz vlastite mljekare. Zve\u010devo je i danas prodaje pod nazivom Mikado.<\/p>\n

Tvornica je zapo\u010dela rad pod nazivom Stock cognac Medicinal i u po\u010detku je proizvodila samo jaka alkoholna pi\u0107a. Od 1936., kada je ostvarena suradnja sa \u0161vicarskim poduze\u0107em Nestl\u00e9om, Zve\u010devo po\u010dinje proizvoditi prve konditorske proizvode. Poslovna suradnja s Nestl\u00e9om trajala je deset godina. Unutar tvornice postojala je i knji\u017enica za radnike, a uz tvornicu radnicima je bio vezan i dru\u0161tveni \u017eivot. Poduze\u0107e je 1948. nacionalizirano, a unato\u010d isteku Nestl\u00e9ove licence tvornica je uz jaka alkoholna pi\u0107a nastavila proizvoditi i vlastite konditorske proizvode. Od 1951. nosi ime Zve\u010devo.<\/p>\n

Tijekom 1960-ih nastali su mnogi drugi konditorski proizvodi, koji se prodaju i danas \u2013 mlije\u010dne \u010dokolade s lje\u0161njacima Seka i Braco, mlije\u010dne \u010dokolade s vi\u0161e vrsta vo\u0107nog punjenja Samo ti i Volim te (od 1966) i \u010dokoladni pruti\u0107i s razli\u010ditim punjenjima Mond (od 1970). Zve\u010devo je 1970. ponovno pokrenulo poslovnu suradnju s Nestl\u00e9om, a od 1987. ponovno je pokrenulo i proizvodnju vafel-proizvoda.<\/p>\n
