Dobro skladi\u0161tena \u0107e, bez obzira na vrstu \u010dokolade, kvrcnuti pri lomljenju te \u0107e imati glatku sjajnu povr\u0161inu. Visoka temperatura topi \u010dokoladu \u0161to rezultira time da kristali u njoj postanu nestabilni, pa nakon ponovnog stvrdnjivanja \u010dokolada vi\u0161e nema ugodan ni izgled, ni konzistenciju, ni okus.<\/strong><\/p>\n

Koja je idealna temperatura za \u010duvanje \u010dokolade?
\n<\/strong><\/h3>\n

Idealna temperatura na kojoj bi valjalo \u010duvati \u010dokoladu je izme\u0111u 19\u00baC i 21\u00baC. Mnogi se ljeti odlu\u010de za \u010duvanje \u010dokolade u fri\u017eideru, no to nije preporu\u010dljivo iz dva razloga. Prije svega, \u010dokolada lako apsorbira mirise iz okoline pa \u0107e tako za koji dan mirisati po primjerice siru ili gula\u0161u koji joj je u susjedstvu na polici. Drugo, \u010dokolada \u0107e u fri\u017eideru na sebe povu\u0107i vlagu \u0161to \u0107e rezultirati \u201ccvjetanjem \u0161e\u0107era\u201d na povr\u0161ini. To ne\u0107e utjecati na okus \u010dokolade ali \u0107e izgledati manje privla\u010dno zbog neugledne povr\u0161ine.<\/p>\n

Gdje \u010duvati \u010dokoladu po ljeti?
\n<\/strong><\/h3>\n

\u010cokoladu \u010duvajte na suhom i mra\u010dnom mjestu, a ako \u0107ete ju \u010duvati du\u017ee vremena, zamotajte je u foliju pa stavite u vre\u0107icu sa zip zatvara\u010dem i istisnite sav zrak iz nje kako biste sprije\u010dili oksidaciju i kvarenje. Ovisno o vrsti \u010dokolade na ovaj na\u010din \u010duvana mo\u017ee trajati do dvije godine kada je rije\u010d o tamnoj \u010dokoladi, mlije\u010dna \u0107e trajati do godinu dana, a bijela oko \u0161est mjeseci. Naravno, ukoliko \u010dokolada ima posipe ili punjenja onda oni utje\u010du na kra\u0107i rok trajanja.<\/p>\n

Ide li \u010dokolada u fri\u017eider?

Ako ba\u0161 nikako ne mo\u017eete ljeti osigurati temperaturu do 22\u00baC tada je trebate staviti u fri\u017eider da biste zadr\u017eali njenu jestivost. Preporu\u010damo da ju dobro zamotate sa folijom, \u010dim stegnutije kako biste sprije\u010dili prodor kondenzata. Nakon toga ju stavite u vre\u0107icu sa zipom i istisnite zrak. Spremite ju u fri\u017eider na gornju policu u vratima jer je tu temperatura fri\u017eidera najvi\u0161a. Prije konzumacije ju ostavite na sobnoj temperaturi oko pola sata. Ako je \u010dokolada prehladna, ne\u0107ete mo\u0107i potpuno osjetiti njene arome pa \u0107e u\u017eitak biti slabiji.<\/p>\n

\u010cokolada koja se ne topi na vru\u0107ini<\/strong><\/h3>\n

Za sve one manje pa\u017eljive i strpljive tako\u0111er imamo rje\u0161enje, a to je termostabilna \u010dokolada. Ona sadr\u017ei manje udjela kakaove masti pa se ne topi ni u pe\u0107nici. Vrhunsku termostabilnu \u010dokoladu mo\u017eete kupiti u na\u0161oj trgovini<\/a> pri Muzeju \u010dokolade Zagreb. Cijena joj je 70 kn za 500 g. Ipak, preporu\u010damo u\u017eivanje u klasi\u010dnim \u010dokoladama jer one nam nude bogatstvo okusa za koje se vrijedi potruditi i pravilno ih \u010duvati.<\/p>\n
