Od zrna kakaa do \u010dokoladne plo\u010dice – kako nastaje \u010dokolada koju volimo?<\/strong><\/h3>\n

 <\/p>\n

\u010cokolada<\/strong>, sveprisutna i op\u0107e popularna slastica, proizvodi se od zrna kakaa koje dobivamo od biljke kakaovca, slu\u017ebenog naziva theobroma cacao<\/strong> \u0161to zna\u010di hrana bogova. No zrna koja dobivamo iz plodova te tropske vo\u0107ke su daleko od \u010dokolade u kojoj danas u\u017eivamo. Postoje razli\u010diti pojmovi koji definiraju na\u010din proizvodnje \u010dokoladne plo\u010dice. Ukoliko proizvo\u0111a\u010d kakaovca sudjeluje u procesu od uzgoja biljke do krajnjeg proizvoda takvu proizvodnju zovemo tree-to-bar<\/strong> i uklju\u010duje niz koraka: po\u010dev\u0161i od uzgoja vo\u0107ke, berbe, \u010di\u0161\u0107enja plodova, fermentacije zrna, su\u0161enja, pr\u017eenja, usitnjavanja, vijanja, mljevenja, kon\u010diranja, temperiranja i na kraju izlijevanja u kalupe, hla\u0111enja i pakiranja. Chocolate makeri<\/strong>, tj. proizvo\u0111a\u010di \u010dokolade iz nabavljenog zrna kakaa proizvode prvo \u010dokoladnu masu, pa onda krajnji proizvod, vrlo cijenjene bean-to-bar<\/strong><\/a> \u010dokolade. U Hrvatskoj je svega nekoliko takvih proizvo\u0111a\u010da – Nadalina<\/strong><\/a> iz Solina i Taman Artisan Chocolates<\/strong> <\/a>iz Zagreba. \u010cokolatijeri<\/strong> se naj\u010de\u0161\u0107e u proces proizvodnje plo\u010dice uklju\u010duju tek negdje na pola puta – kada se ve\u0107 izra\u0111ena \u010dokoladna kuvertura treba temperirati i oplemeniti s raznim infuzijama i inkluzijama. Mo\u017eemo zaklju\u010diti da je proizvodnja kvalitetne \u010dokolade slo\u017een proces koji se redovito prote\u017ee preko pola svijeta.<\/p>\n

Nestaje li \u010dokolada? Pitanje odr\u017eivosti popularne slastice.<\/strong><\/h3>\n

 <\/p>\n

Mediji nerijetko upozoravaju na opasnost od nestanka \u010dokolade. Kao glavni razlozi se navode rast cijena, bolesti biljke kakaovca, slabi urodi i sli\u010dno. No to su uglavnom posljedice problema koji le\u017ee puno dublje, i koji osjetno utje\u010du na odr\u017eivost. Sve kre\u0107e od planta\u017ea na kojima se uzgaja kakaovac. Ra\u0161ireno izrabljivanje radnika<\/strong> (poglavito u Africi, Aziji i Ju\u017enoj Americi), ekolo\u0161ki neprihvatljivo gospodarenje planta\u017eama kakaovca<\/strong> (deforestacija, forsiranje monokultura), zahtjevna i skupa logistika<\/strong> (sirovine nastaju oko ekvatora, a prera\u0111uju se mahom u Europi i Sjevernoj Americi) i dodavanje neprihvatljivih sastojaka u \u010dokolade<\/strong> (poput palminog ulja i ogromnih koli\u010dina \u0161e\u0107era)… Sve navedeno se radi sa ciljem da se uta\u017ei globalni apetit za sve vi\u0161e \u010dokolade. Nau\u0161trb kvalitete i odr\u017eivosti. Iako jo\u0161 nismo do\u0161li do kolapsa, dugoro\u010dne prognoze nisu optimisti\u010dne, jer rast proizvodnje, uz istovremeno iscrpljivanje i devastiranje farmi, ne mo\u017ee i\u0107i unedogled.<\/p>\n

Kako spasiti \u010dokoladu?<\/strong><\/h3>\n

 <\/p>\n

Najo\u010ditije rje\u0161enje je da jedemo manje \u010dokolade. Ali zato kvalitetne. Da kao potro\u0161a\u010di odustanemo od jeftinih (nekada i surogat) \u010dokolada koje nam se po akcijskim cijenama nude po supermarketima. Jedimo manje, ali kvalitetno. Izbjegavajmo proizvode s palminim uljem umjesto kakao maslaca. Odreknimo se \u0161e\u0107ernih tabli s kakao prahom nedokumentiranog porijekla. Birajmo samo ono \u0161to je odr\u017eivo – stavimo kvalitetu ispred kvantitete. A surogat proizvode, ono \u0161to pekare koriste za “\u010dokoladne kroasane” i “buhtle s \u010dokoladom”, stavimo sa strane.<\/p>\n

Ima li kvalitetne alternative na \u010dokoladu?<\/strong><\/h3>\n

 <\/p>\n

Surogat \u010dokolade <\/strong>se u pravilu ne odlikuju visokom kvalitetom, nego niskom cijenom. I neodr\u017eive su jer i dalje koriste mnoge iste sirovine kao i prava \u010dokolada, samo s naglaskom na jeftine sastojke (\u0161e\u0107er, kakaov prah ni\u017ee kvalitete, biljne masti, emulgatori, umjetne arome i sli\u010dno). To je segment u kojem alternativu razvija sve vi\u0161e proizvo\u0111a\u010da, poput njema\u010dkog Planet A Foods<\/strong><\/a> koji nudi Chovivu<\/strong>, ranije znanu i kao NoCoa<\/strong>.<\/p>\n

 <\/p>\n

\u0160to je ChoViva i koje su njene prednosti?<\/strong><\/h3>\n

 <\/p>\n

Prvo valja naglasiti jednu stvar – ChoViva nije \u010dokolada<\/strong>. I ne pretvara se da to je. ChoViva<\/strong> je odr\u017eiva alternativa koja nastoji ponuditi okus i do\u017eivljaj \u010dim sli\u010dniji onom od prave \u010dokolade. Posti\u017ee to tako \u0161to umjesto kakaovca kao osnovu koristi biljne sirovine koje se nalaze u blizini proizvodnje i tr\u017ei\u0161ta (tj. Njema\u010dke i \u010ce\u0161ke). Koriste lokalne \u017eitarice i sjeme suncokreta, \u010dime zna\u010dajno skra\u0107uju logisti\u010dke lance (nema isporuka preko pola svijeta) te lako kontroliraju kvalitetu dobavlja\u010da (nema anonimnih planta\u017ea na kojima se mo\u017eebitno izrabljuju radnici). Samim time \u0161tede 90% emisije CO2<\/strong> u odnosu na klasi\u010dnu \u010dokoladu. Postoje veganske varijante, no s obzirom na \u017eitarice koje se nalaze u osnovi ne jam\u010de da je bez glutena. ChoViva<\/strong> je pogodna za kuhanje<\/strong> i pe\u010denje<\/strong>, mogu je jesti djeca<\/strong> i trudnice<\/strong>. Nije toksi\u010dna \u010dak ni za pse, \u0161to je slu\u010daj kod \u010dokolade.<\/p>\n

Kakav je okus “\u010dokolade” bez kakaovca?<\/strong><\/h3>\n

 <\/p>\n

Kao i svaka druga slastica, i ChoViva se mora dokazati prije svega na jednom podru\u010dju, a to je okus. U Muzeju \u010dokolade Zagreb<\/strong><\/a> smo imali priliku sudjelovati u njihovom velikom istra\u017eivanju krajem 2021., kada su limitiranom broju ispitanika (njih svega 300) slali svoj “Supermassive Test Kit<\/strong>“. Tada jo\u0161 pod brendom Qoa<\/strong>, pripremili su kutiju s razli\u010ditim “pralinama” napravljene od NoCoe<\/strong> (dana\u0161nje ChoVive<\/strong>), punjene najrazli\u010ditijim zanimljivim filama. I dok odmah moramo naglasiti da i dalje preferiramo klasi\u010dnu \u010dokoladu, moramo priznati da su mnogi poslani uzorci imali vrlo zanimljiv okus. U proizvodnji su uspjeli dobiti i visok sjaj, karakteristi\u010dan za kvalitetno temperiranu \u010dokoladu, a i donekle \u010dvrsto\u0107u \u0161koljkica pralina, radi koje su lijepo pucale prilikom degustacije. Danas, godinu i pol dana kasnije i nakon rebrandinga u ChoViva<\/strong>, njihove dora\u0111ene proizvode mo\u017eete na\u0107i na njema\u010dkom i austrijskom tr\u017ei\u0161tu.<\/p>\n

Gdje se mo\u017ee na\u0107i ChoViva?<\/strong><\/h3>\n

Ekipa iz Planet A Foods<\/strong> nije stala na istra\u017eivanju, nego su pokrenuli ozbiljnu proizvodnju. Nakon pokretanja tvornice u \u010de\u0161kom Pilsenu na tr\u017ei\u0161tu su ponudili cijeli niz aplikacija. U suradnji s njema\u010dkom Seidl Confiserie<\/strong><\/a> razvili su niz slastica temeljenih na ChoVivi<\/strong> (poput plo\u010dica s naran\u010dom, dra\u017eeja s bademima, brusnicama ili gro\u017e\u0111icama, vru\u0107im napicima), a odnedavno se nalaze i u veganskoj ponudi poznatih K\u00f6lln<\/strong><\/a> m\u00fcslija. Vi\u0161e dakle ne govorimo samo o egzoti\u010dnoj ideji, nego o inovaciji u prehrambenoj industriji koja se nudi \u0161irokom tr\u017ei\u0161tu.<\/p>\n

Ho\u0107e li “\u010dokolada” bez kakaovca zamijeniti \u010dokoladu?<\/strong><\/h3>\n

 <\/p>\n

Usudit \u0107emo se pogledati u kristalnu kuglu i procijeniti \u0161to nas \u010deka. Na\u0161a prognoza je da ne\u0107e zamijeniti vrhunsku \u010dokoladu. I to ne samo radi okusa, nego vi\u0161e radi toga jer se naprosto ne radi o istom proizvodu. Vrhunski artisan i craft \u010dokolatijeri \u0107e sasvim izvjesno i dalje biti spremni iznenaditi nas s famoznim i originalnim kreacijama koje tra\u017ee zrno kakaovca kao osnovu.<\/p>\n

No jeftine “supermarket \u010dokolade”, ba\u0161 kao i surogati koji se koriste u slasti\u010darstvu, u ChoVivi<\/strong> imaju ozbiljnog konkurenta. Jer dok je okus jo\u0161 subjektivna stvar (velikim dijelom pod utjecajem navike), utjecaj na okoli\u0161 i odr\u017eivost nisu. A na tim poljima ChoViva<\/strong> pobje\u0111uje bez konkurencije. Cijena \u0107e se vjerojatno s vremenom sve vi\u0161e pribli\u017eavati onoj jeftine \u010dokolade ni\u017ee kakvo\u0107e, a samim time i dostupnost.<\/p>\n

Da se vratimo na pitanje s po\u010detka \u010dlanka: Kako spasiti \u010dokoladu? Mo\u017eda ChoViva<\/strong> nije ugroza za svijet \u010dokolade, nego upravo obrnuto – njen spasitelj. Jer smanjenjem koli\u010dine nekvalitetnih prera\u0111evina na bazi kakaovca ostaje vi\u0161e sirovina za proizvodnju vrhunskih \u010dokolada. \u0160to bi se trebalo pozitivno odraziti na cijeli lanac – od farmera u Obali Bjelokosti do sladokusca u Hrvatskoj. Vrijeme \u0107e pokazati svjedo\u010dimo li mo\u017eda upravo revoluciji u slasti\u010darstvu koja \u0107e zavr\u0161iti kao win-win za sve.<\/p>\n
