TAMAN Artisan Chocolates

If you are a chocolate lover, you probably didn’t miss the information that the Croatian brand TAMAN Artisan Chocolates launched its second series of bean-to-bar chocolates at the beginning of 2021. They are produced in nano batches so that only 100 to 120 pieces will be available to the public. To remind you, TAMAN is the owner of as many as 17 prestigious Academy of Chocolates medals that prove its quality and innovation. They have established themselves as producers of top-quality gourmet chocolates and pralines, but they continue their success in the new manufacturing line.

The first nano batch of their bean-to-bar chocolate that came out in late 2020 was dedicated to South America – Ecuador Arriba National, Guatemala Alta Verapaz and Peru Sumaqao. Each of these chocolates in the series is named after a different determinant – the first according to the cocoa variety, the second by region, and the third by the cocoa farmer.

The second series, which was released in February this year, was dedicated to the spread of cocoa in the world, so we have the opportunity to taste aromas and flavors from three continents: South America, Africa and Asia. Although the cocoa they used in production from geographically very remote localities is very similar in its organoleptic properties, through different approaches to roasting and conching completely different chocolates were made and each got its own character.

TAMAN COLOMBIA chocolate, SIERRA NEVADA 75%, is produced from organic cocoa grown in the isolated mountainous region of the Sierra Nevada de Santa Marta in northern Colombia. This chocolate is adorned with a rich cocoa taste, with a note of nuts and the freshness of fruit acids.

TAMAN MADAGASCAR chocolate, ANTSAMALA – Sambirano 73%, is made from cocoa beans from Africa. Antsamala is a farm in the Sambirano River Valley in Madagascar where local farmers carefully cultivate and process cocoa to highlight its unique spicy taste accompanied by floral aromas, quite different from other cocoa trees on the island.

Asia is celebrated in this series with TAMAN chocolate PHILIPPINES, MANA – Davao, 74%. The Philippines is the first country in Asia to start growing cocoa, and today the Davao region is considered one of the capitals of fine cocoa. Farmers there regularly win the brightest accolades for their cocoa. This chocolate is made from the finest cocoa beans from the Mana estate located in the Davao region on the southern Philippine island of Mindanao, and brings flavors of dried fruit, raisins and figs, rum, mild bitterness.

The guys at Taman are announcing their third nano series for the fall of 2022.
